Blend eggs and spinach until well blended in a blender or smoothie maker. Heat a large nonstick skillet and add a little olive oil. Pour half the batter into the skillet and swirl/rotate the skillet to get an even coating. Cook on LOW temp for 2-4 min. Carefully loosen edges and with a couple spatulas Flip it over and cook 1-2 minutes. Careful not to overcook. then flip the wrap out onto a towel , cover it with another towel so it wont dry out. Cook the rest. Makes 2 wraps/shells.
Soften the cream cheese and completely cover both wraps on one side. then lay out the rest of the ingredients (slice the avocado)-can add a little mustard and cilantro for taste. ROLL it up on itself like a burrito Use extra cream cheese as ‘glue’ to hold the wrap together.
Wrap them in plastic wrap until ready to eat. YUM! I serve with a side of Pork Rinds /Chicharrone. (Of course you can use other meats if you wish but the nutrition will change slightly)
