Why cooked foods often have less calories than uncooked?
Does food lose calories in cooking process?
Often food absorbs water during the cooking process and its mass increases. As a result the amount of nutrients per unit of weight goes down.For example, 100 g of uncooked brown rice contains 367 calories. After cooking rice absorbs 200 g of water and its mass increases to 300 total. It still contains 367 calories in total, however the amount of calories per 100 g now is reduced to 122 calories (367 / 3 = 122).
