Filling:
1. Combine sliced peaches with sweetener. Add lemon juice, cinnamon, salt and almond extract to taste. It will depend upon the fruit. Really excellent tree-ripened peaches don't need much help. Less flavorful peaches need more lemon, cinnamon, salt and extract. The goodness of the pie depends on the goodness of the fruit. If you are using less flavorful peaches, you can throw in a handful of some other flavorful fruit, like rhubarb, cranberries, blackberries, or pineapple to perk it up. Lemon or orange zest can help as well, but go easy, as it can overpower all the other flavors.
2. When the filling tastes good, if there is a lot of juice, consider adding a thickener. I prefer guar gum, but you can use cornstarch. Drain juice from filling into large measuring cup. Use 1 Tablespoon cornstarch per cup of fluid, or 1/4- 1/2 tsp guar gum. The cornstarch will thicken as the pie cooks, the guar gum thickens in a about one minute, so you can start with 1/4 tsp, and add more in a minute if it isn't thick enough. Add thickened juice back to peaches. Or, skip the whole thing and have a juicy pie.
3. Place peach mixture into a 9"deep dish pie plate, 9 - 10" baking dish or casserole dish. Err on the side of a bigger dish. A regular pie dish will be too small, the filling will bubble over the sides and your oven will be a mess.
Crumble topping:
1. Combine oats, almond flour, chopped walnuts,flax meal, sweetener and salt in large bowl. Cut in cold butter with two knives, or use your hands to knead mixture until it begins to clump. There is no gluten, so you can't overdo this part.
2. Sprinkle the topping over the fruit in the baking dish.
3. Bake at 400 degrees about 35 - 45 minutes, until filling bubbles and top is golden brown.
The filling will firm up as it cools.
Excellent with a yogurt or cream topping.
