Instructions
Got this recipe (and modified it by substituting cauliflower for the semolina) from Simple Menu https://www.youtube.com/channel/UCWbt85RzN3yQ3vEVOLnrBhw. 1. Peel then shred the zucchini and carrot. 2. Put the zucchini in a bowl and salt. Wait 10 minutes. Then squeeze as much liquid out of the zucchini as possible. 3. Finely chop the cauliflower. 4. Place the zucchini, carrot and cauliflower in a bowl. Mix. 5. Finely chop the 1/2 onion (maybe a bit less) and add to the mix. 6. Add two raw eggs to bowl and mix. 7. Prepare a fry pan, add olive oil - low heat. 8. Grab a bit of the mixture (squeeze out an moisture) and form into ball. Place into fry pan and press down slightly so that its more of a patty. 9. Fry on each side for 3-4 minutes. 10. Enjoy
