Tomato and Spinach Egg Bites

Instructions
1. Preheat oven to 300 2. Boil a kettle of water, I boiled enough to fill two cake pans. 3. Add all ingredients to a blender and blend until combined. 4. Pour mixture into nonstick or greased cupcake pan. 5. Place cake pans on bottom rack, fill with boiling water. Place cupcake pan on top rack. 6. Bake for 30 - 35 minutes or until each cup is set. 7. Remove from oven and let cool 5 minutes, then serve. Egg bites keep for up to 3 days in an air tight container in the refrigerator, or frozen for 2 months. To reheat, place bite in the microwave and heat in 30 second increments until desired temperature.
