Instructions
Prep Eggplant by salting and draining (IMPORTANT), saute thin sliced onion in 1/3 cup olive oil until transparent, add minced garlic after so it doesn't burn and saute until golden. add veggies except eggplant. Stir to coat with olive oil and cook for 2 or 3 minutes. Add diced or cubed eggplant and toss in veggie mix and oil. Turn down heat, cover and simmer for 45 minutes. Remove lid and simmer for 15 more minutes. Add salt and pepper last. Did not need hardly any other seasonings and barely any salt and pepper. Delicious with sour cream, on pasta, on crusty bread, alone, or on rice, mixed with hot sausage, regular chicken. Take your pick :)
