Oven directions
Preheat oven to 375
In small pan over medium heat melt butter, turn heat off immediately once but is all melted.
In large bowl mix eggs, rice, green onions, tuna and mix well
Add to the tuna mixture the melted butter, and thyme.
Now mix in the bread crumbs and mozzarella cheese, make sure everything is mixed well.
Press mixture into a cast iron pan
Sprinkle with parmesan cheese and Colby jack cheese.
Place in oven in middle rack
Bake at 375°f for 40 minutes
Remove from oven
Slice tomato in slices about a pinky thin or in thin wedges.
Press tomato into pie and return to oven for about 5 minutes.
Remove from oven and let so for about 10 to 15 minutes before serving.
Changes for microwave
Instead of putting in cast iron place in microwave safe baking dish.
Cover pie with wax paper or a microwaveable cover
Microwave on high for 6 minutes
Turn and microwave another 5 to 6 minutes
Remove from microwave, cut out slice tomato as stated in oven directions and press into pie. Do not rerun to microwave.
Let stand 5 to 10 minutes and serve.
