Bring this mixture to a boil and then simmer for 5 minutes. Add 2 servings of low salt tortilla chips (8 chips), 1.5 cups of no salt added black beans, and crack 4 large eggs into the pan. Cover the pan and simmer until eggs are fully cooked. Remove from heat and sprinkle 1/4 cup of cheddar cheese over the mixture. Cover the pan again until the cheese is fully melted. Enjoy!
