Lightly oil a large pot with 1 tablespoon of olive oil and heat over medium heat. Once the oil is warm add 1 medium onion, diced. Sautee onions briefly until lightly golden, then add 2 (5oz) cans of chicken meat, 1 tablespoon of garlic powder, 1 teaspoon of cumin, and 1 teaspoon of chili powder to the pot. Cook chicken until a light golden brown and then add one (12oz) can of crushed tomatoes, 2.5 cups of no salt added black beans, 4 cups of low sodium chicken broth, 1 (12oz) can of drained yellow corn, 1/4 cup of diced cilantro, the juice of 1 lime, and 1/4 cup of olive oil. Stir thoroughly and simmer for 15-20 minutes. Slice 8 small corn tortillas into thin inch long strips and add to pot, simmer for 5 minutes. Enjoy!
