Instructions
Leaving the eggplant whole slice along the length 1 inch or so from the stem, cuts an inch apart, turn 90º repeat. Slice the top off a whole bulb fresh garlic (dried will do but wont taste as good). Season chicken thighs with a robust dry spice mix (suggest Mexican, N. African, Levantine) Roast for 30-40 mins - turning all once. Cool - remove veg skins, bone chicken, chop and mix together with prepared cous cous, corn, beans, a little water. Roast 10 mins more. Season with oil, lemon and fresh parsley
