Mediterranean Egg Wrap

Instructions
Spinach can be substituted with kale; can use whole wheat tortilla; can use green onions. Wilt the spinach in a skillet w/ a little oil and set aside. Pour the egg into the same skillet. Cook and scramble before seasoning. Assemble the wrap w/ eggs, spinach, and other toppings. Wrap and cut in half to serve. Tortilla will be more pliable if heated in microwave for 10 seconds first. Cook eggs well so don't get tortilla soggy. Pat excess oil from tomatoes so tortillas don't get soggy. Can cover tightly in foil and sotre in a plastic freezer-safe container for up to 3 months.
