1 15oz can of Chickpeas
3 tbs of dried cranberries
¼ cup hulled sunflower seed kernels
2.5 oz of diced onion
¼ cup of diced carrot
¼ cup of diced celery
1 tsp olive oil
¾ tsp dried and rubbed sage
½ tsp tried thyme
½ tsp morton lite salt
Cooking Spray
Dice onion, carrot, and celery to make a mirepoix.
Add mirepoix and 1 tsp olive oil to a pan and saute till softened
Open and drain 1 15oz can of chickpeas, reserving the aquafaba (the bean liquid from the can).
Roughly mash the chickpeas till a rough mash.
Fold together the roughly mashed chickpeas, sauteed mirepoix, ¼ cup aquafaba, 3 tbs of dried cranberries, ¼ cup hulled sunflower seed kernels, ¾ tsp dried and rubbed sage, ½ tsp tried thyme, ½ tsp morton lite salt.
Use cooking spray to lightly coat a pan.
Turn mixture out into a pan, and toast at 350f till the top starts to lightly color and crips, then fold mixture, and return to the oven
Continue to cook till the top lightly browns and slightly crisps again, then remove.
Serve.
