Instructions
(Buy mild or medium enchilada sauce.) Dice veggies and mix all ingredients except cheese and put into an oiled baking dish. Shred the cheese and arrange evenly over the top. Bake 350 degrees 45 min. Let rest 15 min before serving. Optional: serve with lite sour cream, especially if it's spicy.
