Prepare speghetti squash. Puncture and microwave on high for 12 minutes, or halved cut side down on a cookie sheet in a 400-degree oven for 1 hour. Allow squash to cool. Scrape squash from the rind into a colander in a bowl and set aside.
Season chicken to taste with salt, pepper and Italian seasoning.
Coat the bottom of a high sided sauté pan with olive oil over medium high heat. Add chicken and sauté chicken until done.
Remove chicken from sauté pan and reduce heat to medium.
Add mushrooms and sundried tomatoes to the pan and sauté until tomatoes begin to soften.
Add basil and garlic and sauté until basil is wilted.
Add spinach and cooked until wilted.
Add prepared spaghetti squash and thoroughly combine.
Stir in cream.
Return chicken to sauté pan and heat through.
Top with grated parmesan and serve.
