Chicken Marinade
600 g (1.2 lb) chicken thighs or breast, cut into pieces
1/2 cup plain yogurt
1 tbsp lemon juice
1 tsp turmeric powder
2 tsp garam masala
1 tsp chili powder
1 tsp cumin
1 tbsp ginger garlic paste (or minced garlic and ginger)

Butter Chicken Sauce
2 tbsp oil
1 onion, finely chopped
2 tsp ginger garlic paste
1 1/2 cups tomato puree or crushed tomatoes
1 tsp chili powder
1 tsp garam masala
1 cup broccoli florets
1 cup cauliflower florets
1/2 cup plain greek yogurt
1 tsp sugar
Salt to taste
Note: 2 tbsp of butter were removed and the 1 cup heavy cream was replaced with greek yogurt

Brown basmati rice
Whole Grain Naan bread
Fresh coriander (optional garnish)
Preparation Steps
Marinate the chicken: In a bowl, mix the greek yogurt, lemon juice, spices, and salt. Add the chicken and coat it well. Let it marinate for at least 30 minutes.
Cook the chicken: Cook the marinated chicken in a pan or oven until it is browned and mostly cooked through. Set aside.
Prepare the sauce: In a large pan, heat the olive oil (no butter). Add the chopped onion and cook until soft.
Add spices, tomato, and vegetables: Stir in the ginger-garlic paste, tomato puree, chili powder, and garam masala. Add the broccoli and cauliflower and let the sauce simmer for about 10 minutes until the vegetables begin to soften.
Add yogurt and chicken: Reduce the heat slightly and stir in the Greek yogurt. Add the cooked chicken and simmer for another 5 to 10 minutes until the chicken is fully cooked and the sauce thickens.
Serve: Serve the butter chicken with brown basmati rice (¾ cup per person) and half a whole-wheat naan. Garnish with fresh coriander if desired.
