Chicken Marinade
600 g (1.2 lb) chicken thighs or breast, cut into pieces
1/2 cup plain yogurt
1 tbsp lemon juice
1 tsp turmeric powder
2 tsp garam masala
1 tsp chili powder
1 tsp cumin
1 tbsp ginger garlic paste (or minced garlic and ginger)

Butter Chicken Sauce
2 tbsp oil
1 onion, finely chopped
2 tsp ginger garlic paste
1 1/2 cups tomato puree or crushed tomatoes
1 tsp chili powder
1 tsp garam masala
1 cup broccoli florets
1 cup cauliflower florets
1/2 cup plain greek yogurt
1 tsp sugar
Salt to taste
Note: 2 tbsp of butter were removed and the 1 cup heavy cream was replaced with greek yogurt

Brown basmati rice
Whole Grain Naan bread
Fresh coriander (optional garnish)
Preparation Steps
Marinate the chicken: In a bowl, mix the yogurt, lemon juice, spices, and salt. Add the chicken and coat it well. Let it marinate for at least 3 hours.
Cook the chicken: Preheat the oven to 400°F. Place the marinated chicken on a baking sheet lined with parchment paper. Bake for 15–20 minutes, until the chicken is cooked through. Tandoori style cooking like the traditional Indian recipe avoids adding fat.
Prepare the sauce: In a large frying pan, heat olive oil. Add tomato purée or crushed tomatoes, Greek yogurt, sugar, salt, broccoli, and cauliflower. Stir well.. Add the cooked chicken pieces, any remaining marinade and additional spices to the sauce.
Simmer: Turn the heat to low and let the mixture simmer for about 10 minutes, until the vegetables are tender and the flavors combine.
Serve: Serve the butter chicken with brown basmati rice (¾ cup per person) only. Garnish with fresh coriander if desired.
