Preheat oven 350. Spray 9x13 with cooking spray. Steam broccoli & diced onion on stove top til tender then cool in ice bath. Wisk eggs, almond milk, and cottage cheese well; salt and pepper if desired. Add cheddar and broccoli to egg mixture. Place diced potatoes in bottom of casserole dish. Pour egg mixture over potatoes. Sprinkle a little cheddar on top. Bake uncovered 45 minutes to 1 hour or until set, begin checking at 40 minutes. 8 servings per casserole.
