Em's Keto Muffins.
Ingredients for 4 muffins:
2 eggs, salt, 2 Tbsp Almond flour,
43 grams finely grated parmesan cheese,
1/2 cup shredded cheese (cheddar/Jack/fav)
Procedure:
In a 16 oz measuring cup
beat eggs and a pinch of salt
Mix in Almond flour
Set aside for about 15 min.
meanwhile preheat oven to 375.
then add in the parmesan cheese.
Optionally add a tsp of seasoning
Mix well.
Evenly distribute the mixture into 4-inch,
4 muffin silicon pan.
Top with shredded cheese
Bake in center oven at 375 for 17 minutes.
Remove and let cool a few minutes.
Good to eat warm or cold.
