Instructions
Pre-heat oven to 350. Sauté scallion, mushroom, and spinach in 1/2 tablespoon of olive oil. Scramble 2 eggs, mix in desired spices and cut-up 1 slice of gouda. Line a 6 oz ramekin with parchment paper and add sautéed ingredients and cheese, then pour eggs over. Bake until done.
