NOTE: Kamut and Spelt freshly milled from berries.
1. Combine all ingredients except bread flour and olive oil in a large bowl or stand mixer.
2. Mix until fully incorporated and gluten strands begin to form.
3. Rest covered for 10 minutes
4. Add Bread flour 1/4 cup at a time until incorporated. The lump should be tacky but easy to handle at this point. If needed add more bread flour 1 tbls at a time until the lump is easy to handle.
5. Rest covered in a warm spot for 30 minutes to allow flour to absorb moisture.
6. Stretch and fold until smooth and elastic (approx. 5 minutes).
7. Repeat steps 5 and 6 three more times (2 hours total).
8. Coat your bowl and the dough with olive oil.
9. Rest covered until the dough doubled in bulk (4-6 hours).
10. Divide dough in half and form into your desired shape.
11. Rest covered until loaves show approx. 3/4 increase in bulk (2-3 hours).
12. Place loaves seam side up on a corn meal covered cookie sheet. Score along the seam of your loaves.
13. Preheat oven to 350 (F).
14. Bake 40 minutes. Internal temp 200 (F).
