Instructions
Mix one serving of the chirashi base mix, 1 tsp potato starch, and sesame seeds together till homogeneous. Mix chickpea miso paste, 2 tbsp kimchi, 2 tsp sriracha sauce, and cooked, hulled, sunflower seeds to make the filling mixture. Wet hands with vinegar salted water to split rice into two. With lightly wet hands, form half the rice into a bowl shape, add half the filling mixture, mold rice up and around filling then shape into a disk or triangle 2-3" in diameter. Repeat with other portion of rice. Dust both patties with remaining 1/2 tsp potato starch. Add 1/4 tsp of olive oil to a pan, and brush to evenly coat. Heat oil till shimmering in the pan. Fry till first side is solidified and starting to brown. Add remaining 1/4 tsp olive oil to the pan, brush to coat, and fry other side till solidified and browned. While doing this, you can optionally brush with. Flip and fry on first side till nicely golden brown, then flip. Remove from heat and serve as soon as second side is nicely golden brown
