Shrimp Scampi with Zucchini Noodles (MH)

Description and Instructions
1) Making zucchini zoodles: Rinse & trim ends off zucchini. Set mandolin to 4.5mm julianne and slice the zucchinies. Salt and let weep for 20 minutes. Rinse and let drip dry. Bake in 400 degF oven for 10 minutes. 2) Heat the butter and olive oil in a large skillet over medium-low heat. Add the shallot and cook until beginning to soften, about 3 minutes. 3) Add the garlic and cook 30 seconds. 4) Add the shrimp, salt, red pepper flakes, and black pepper. Sauté for 3 minutes, until the shrimp are beginning to cook but are still somewhat translucent. 5) Add the chicken broth, lemon zest, and lemon juice. Bring to a boil and cook for 1 minute, just until the shrimp are completely opaque and cooked through. 6) Stir in the zucchini noodles and parsley. Toss the noodles with the shrimp so that they are coated with the garlic-lemon sauce and heat just until warmed through. (Do not overcook or the zucchini noodles will become mushy.) 7) Sprinkle with parsley and Parmesan. Serve warm. NOTE1: Use 1 shallot, it's about 1 oz. Use red pepper flakes. Use lemon zest from 1/2 lemon, its about 1 teaspoon. NOTE2: The above ingredients make for a spicy sauce. Can use less garlic and/or red pepper.
