Instructions
Based on Joshua Weissman's Green Goddess Salad. ( https://www.joshuaweissman.com/post/meal-prep ) Cook the 2.5 lbs of chicken. Allow to rest. Using a blender, homogenize: 1/4 c Toasted Almonds (about 48g) 5 tbsp Nutritional Yeast (about 27g) 5 cloves of garlic (about 15g) 1 c basil (about 30g) 1 c baby spinach (about 30g) Juice of one lemon (about 1-1/2oz, 48g) And splashes of water as needed. Slowly stream, blend, and homogenize in: 3.5oz (7tbsp) Olive oil (about 13.5g) 1.75oz (3.5tbsp) Flax Seed Oil (about 48g) Even divide this dressing into 7 small containers. Split 1 pint of cherry tomatoes (10oz, about 283g) in half. In seven small containers, place a half paper-towel at the bottom of each. Even divide the tomatoes between the 7 containers. Cut up and wash the head of lettuce. Spin dry. Cut up the chicken into even portions. Portion out the lettuce and the chicken into separate compartments in the storage container. Portion out croutons into 7 separate air-tight containers. Toss 1 bag (1lb about 454g) of frozen strawberries with 7 tsp of dextrin water soluble fiber (about 28g). Even divide 1/2 container of non fat greek yogurt yogurt (1lb, about 454g) into 7 containers. On top of the yogurt, evenly divide 1/4 c (about 1.25 oz, or 35g) sunflower seed kernels and then the frozen fruit.
