Meat is listed for nutritional analysis as serving size. I start with a whole boneless collar, shoulder or Boston butt (excess will be used in other dishes). Grapes are not included in the nutritional analysis - see step 11 To further reduce potassium you could substitute carrots for the apples, just chop them smaller. Ingredients include a random chicken bone broth as I haven’t saved my home recipe for that. “Nutrition facts” are from the available information on the database and should be considered approximate. Equipment - heavy oven dish with lid (I use a cast iron casserole dish), Small pie dish. 1) slather the prepared joint in sweet mustard and spices 2) sear the meat on all sides, set aside 3) roughy chop and lightly brown the apples, onion, garlic 4) add the beer and stock, bring to boil, stir in drained rinsed beans if using (~choose whichever suits you best) 5) place the meat on top, put the lid on and place in a med-high oven for about an hour - you can add fresh herb (rosemary, tarragon, or thyme) under the meat. 6) remove the lid and continue to cook for 30 minutes more 7) remove the meat and cover to rest. Sprinkle a little flour or corn starch in the dish and put the lid back on. Set the dish on the stove top on low heat. 8) prepare the dumplings (equal amounts by volume - flour and water/milk plus 2 tsp baking powder per cup of flour). Let rest 9) increase the heat under the dish, give it a stir. when bubbling drop the dumplings in - each about a desert spoon. 10) reduce the heat to med-low and put the lid on. Simmer for 15-20 mins (15 if you want to brown the dumplings) 11) if potassium is not restricted, or more is needed roast a handful of red seedless grapes per person in the small pie dish for about 10 mins Slice the meat to appropriate portions (the recipe is calibrated to about 3 thin slices or half a palm sized piece) Add 2 dumplings each. Pour the sauce/veg mix over the meat and dress with grapes if using.
