Instructions
Preparation: 1. Marinate the Chicken: • Combine olive oil, minced garlic, lemon juice, salt, and pepper in a bowl. • Add the chicken breast and let it marinate for at least 30 minutes in the refrigerator.() 2. Grill the Chicken: • Preheat the grill to medium-high heat. • Place the marinated chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F). • Remove from the grill and let it rest for a few minutes before slicing.() 3. Steam the Broccoli and spinach: • Bring a pot of water to a boil and place a steamer basket over it. • Add the broccoli florets to the steamer basket, cover, and steam for about 5-6 minutes, and spinach for 2-3 minutes, or until tender but still bright green.() 4. Cook the Quinoa: • Rinse the quinoa under cold water. • In a saucepan, combine quinoa with water (2:1 ratio) and bring to a boil. • Reduce heat, cover, and simmer for about 15 minutes, or until the water is absorbed. • Fluff with a fork before serving. 1. In a large bowl, combine the chickpeas, black beans, and red kidney beans. 2. Add the chopped red onion, cherry tomatoes, cucumber, and parsley to the bowl. (You can add extra seasoning/ sauces and split this recipe into multiple meals though-out the day)
