Brunoise about 1 tbsp/5g of shallot.
Chop about 1tbs/4g of fresh parsely.
Grate about 1/4 of a medium carrot/20g.
jullien or make small batons out of about 1/4 of a large cucumber, about 75g, and 1/4 of a large zucchini, about 75g.
Whisk together about 1 tbsp/15g red-wine vinegar, about 2 tsp/10g dijon mustard, about 1/2 tsp/2.5g lite olive oil, about 1/2 tsp/2.5g cold pressed flax-seed oil, a heavy pinch of lite salt (KCl, NaCl, Iodine), and a pinch of freshly cracked black pepper.
Fold together the vegetables, herbs, about 1/4 cup/50g of lentils.
Refrigerate.
Serve cold.
