Instructions
Wash, pierce, and microwave a russet potato. Wash, pierce, and microwave a sweet potato. Microwave Cauliflower. Drain excess moisture, and allow to air cool. Once both potatoes and cauliflower are cool enough to handle, great on a box greater. If cauliflower is too soft to grate, roughly mash. Allow shredded potatoes to release their steam and excess moisture by spreading out on a flat surface and allow to cool uncovered. Per each serving, measure out 40g each of the grated sweet potato and russet potato, 20g of grated or mashed cauliflower, 1 tsp of unflavored fiber powder (dextrin), 1/2 tsp of corn starch, 1/4 tsp each of garlic powder and onion powder, 1/8 tsp lite salt, and 1/4 tsp of lite olive oil. Fold ingredients together, then portion out evenly and form into patties. Refrigerate till patties solidify, preferably overnight. Just before eating, spray with a tiny amount of cooking spray, and then either put into a convection oven with a high fan setting and cook at 400f till brown and crispy, bake in a conventional oven at 375 F till brown and crispy, or pan griddle till brown and crispy. Finish with a tiny sprinkle of salt. Serve hot with 1/2tbsp of ketchup.
