Instructions
First, mix 50g of honey into two cups of warm water until fully dissolved. Add the yeast and set aside to bloom. While the yeast blooms, weigh out all of your dry ingredients: flour, wheat gluten, pea protein, and salt. Whisk them together thoroughly to ensure they are evenly incorporated. Next, weigh out the yogurt. Add the yogurt to the dry ingredients and begin mixing. It will not come together very well at first, just focus on breaking up the yogurt and distributing it through the flour mixture. Once the yeast mixture is ready, add the warm water with the honey and yeast to the dough. Knead until everything is fully incorporated, about 5–8 minutes. The dough should be quite sticky and wet at this stage. Cover the dough and refrigerate it to rest overnight or up to 24 hours. The following day, remove the dough from the fridge and knead it on a well-floured counter. Continue kneading while lightly dusting with flour as needed. The dough should be soft and smooth, but not too sticky; this is how you’ll know it’s ready for the second proof. Shape the dough into a loaf and place it into a greased loaf tin. Cover with a lightly floured towel and let it rest for at least 1 hour. Bake at 350°F (175°C) until the internal temperature reaches 190–210°F at the thickest point (I usually aim for just under 200°F).
