Instructions
Chop all vegetables and cube ham. Rinse and sort peas. In a large pot combine water, ham, onion, garlic, carrots, celery and bay leaf. Bring to a boil for 10 minutes. Reduce heat, cover and simmer for 2 to 2 1/2 hours, or until tender. Add salt, pepper, and Cajun seasoning to taste. Add water throughout to maintain desired consistency.
