Instructions
Makes 4-6 servings (plus 4-6 servings of sauce and meatballs for the freezer). Ingredients Meatballs (makes ~32 meatballs; I froze half raw) 2lb meat e.g. 1lb Sprouts Italian Chicken Sausage & 1lb ground chicken or turkey 3/4 cup bread crumbs 2 eggs ½ yellow onion, grated ¼ cup Parmesan, grated Garlic powder Italian seasoning Salt & pepper Potatoes (for *half* meatballs) 5 Russet Potatoes 8-12oz cheese of choice, shredded (I did 6oz Monterey jack and 6oz sharp white cheddar) Olive oil Salt & pepper Tomato Sauce (for all meatballs; I froze half) ½ yellow onion, diced 1 carrot, diced 8 garlic cloves, minced 28 oz can crushed tomatoes + Italian seasoning & 1 jar Rao’s marinara Olive oil Serve with veggies (12 mushrooms, 2 zucchini, 2 yellow squash per half) or a side salad (romaine, ranch, and any veggies works great) Steps 1. Cook potatoes: Scrub potatoes and dry. Coat in 1 tbsp olive oil, salt, and pepper and cook on a rack at 450F for 60 minutes. Cut immediately in half when out oven. After a few minutes, score the inside of each potato half. 2. Form Meatballs: Mix ingredients (mix everything else before adding meat). Working with ¼s, divide it in ½, then ½, then ½ (8 pieces per ¼ meat) and round into meatballs. Freeze half. 3. Cook meatballs: While potatoes cook, brown meatballs in a stovetop pan or mini muffin tin with olive oil. 4. Cook tomato sauce: Add onion and carrot to pan with 1 tbsp olive oil. 5 minutes later sautée garlic before adding tomato sauce. Cook as desired. 5. Enhance potatoes (optional): Spoon out potato filling and rice. Mix with garlic powder, 2 tbsp oil, s&p, and 1 cup cheese. Put back into potato skins, top with 0.5 cup cheese and broil when ready to eat. 6. Cook veggies: Dice mushrooms, zucchini, and yellow squash. Cook mushrooms for 4-6 minutes in 1 tbsp oil then add squashes for 2-3 minutes. To serve (or reheat from fridge): Broil potato halves until cheese browns.
