Microwave 2 bags of frozen cauliflower to package directions.
Clean Leeks: cut down the middle, spread leaves, wash under running water.
Cut white part of leeks into thin slices, about 2 lbs. Wash in a collider to ensure all grit and dirt is removed.
Wash and slice 2lbs white skin potatoes.
Roughly dice 1/2lb of white onion.
Add leeks, potatoes, white onion, 2 cans of cannelloni beans, 2 bags of cooked cauliflower, and 2 qrts of low sodium chicken stock or bone broth to a pot. Bring to a simmer till all vegetables are soft, about 45 min.
Mix 7 scoops pea protein powder with 1 tbsp each of flax oil and lite olive oil. Mix to a paste.
Place pot in a sink of cold water and puree with a stick blender till cool and smooth. Blend in protein and oil paste, 3 tbsp fiber powder, 2 tsp lite salt, 1 tsp white pepper, several gratings of nutmeg, and container of Greek yogurt. Add water or seasonings to taste.
Portion in 8 containers. Freeze any portions not to be eaten in 4 days.
