Roughly Dice 1lb of white onion. Add 4lbs of frozen spinach, 2 bags of frozen cauliflower, 2 cans of cannelloni beans, 1 qrt of low sodium chicken stock/bone broth, and 6 cups of water to a pot.
Simmer mixture till all vegetables are soft.
Cool soup by placing pot in a sink of cold water and puree soup with a stick blender and mix till cool.
Mix in a bowl 7 scoops of pea protein powder with 3 tbs lite olive oil and 1 tbsp cold pressed flax seed oil to a paste. Blend paste into the soup.
Mix in 2 cups of 1% milk and 3/4 cup of nonfat greek yogurt into the soup. Add in 2 tsp lite salt, 1 tsp white pepper, and 3 tbsp dextrin fiber powder.
Adjust seasoning and blend in water to taste and to a desired consistency.
