Instructions
Rinse canned beans or cook from dried. I use low sodium organic canned beans, or cook them myself, so the sodium levels in the nutrition analysis are inflated. Chop vegetables into bite sized pieces, I now leave the olives whole. The green beans, carrots, cabbage, radishes and half of the jalapeños are lacto-fermented with a 2.5% brine. Fermented veggies are not an option on this website. Cheese is cut into small chunks, can be omitted, meat can be added. I used home-brewed black currant vinegar but ACV works just as well. All ingredients from the garlic and olive oil on down are the dressing (except for the cheese - I can’t change the listed order), add to your preference level. You can use store bought vinaigrette. This is a basic recipe, use whichever combination of beans, veggies, and dressing you prefer or have available in your kitchen. Variety is key for increasing nutrient density and complementary amino acids. This recipe is high in protein, fiber and probiotics. I estimated serving size for this website but I just make a big batch and eat it over several days. The picture shows the salad before the cheese and dressing were added. Bon appetit.
