Chicken Marinade
600 g (1.2 lb) chicken thighs or breast, cut into pieces
1/2 cup plain yogurt
1 tbsp lemon juice
1 tsp turmeric powder
2 tsp garam masala
1 tsp chili powder
1 tsp cumin
1 tbsp ginger garlic paste (or minced garlic and ginger)

Butter Chicken Sauce
2 tbsp butter
1 tbsp oil
1 onion, finely chopped
2 tsp ginger garlic paste
1 1/2 cups tomato puree or crushed tomatoes
1 tsp chili powder
1 tsp garam masala
1 cup heavy cream
1 tsp sugar
Salt to taste
To Serve
Basmati rice
Naan bread
Fresh coriander (optional garnish)
Preparation Steps
Marinate the chicken: In a bowl, mix the yogurt, lemon juice, spices, and salt. Add the chicken and coat it well. Let it marinate for at least 3 hours.
Cook the chicken: Melt butter in a large frying pan over high heat. Take the chicken out of the marinade (leave the marinade on the chicken but keep the extra marinade in the bowl). Cook the chicken for about 3 minutes, until it turns white on the outside.
Prepare the sauce: Add tomato puree or crushed tomatoes, cream, sugar, and salt to the pan. Then add the remaining marinade from the bowl.
Simmer: Turn the heat to low and let the sauce simmer for 20 minutes.
Serve: Taste and add more salt if needed. Garnish with coriander (optional) and serve with basmati rice and naan bread.
